 Aloo dum biryani | dum aloo Britani is one of the very testy and popular veg dish in India. I have used home made biryani masala here and it's become healthy. It is very easy to cook in home and everybody like the dish including children so you must try this ..............  

 Ingredients:-----

For Biryani Masala:----

Cumin(jeera) --2 tsp

Cinnamon--1(1/2 inch)

Coriander powder-- 2 tsp

Mace--1

Star anise--1

Black pepper-- 4

Jaifal-- few

Green cardamom--5

Fennel seeds-- 1/2 tsp

Cloves--4

Kaju-- 7

Sesame seeds--1 tbsp

Red chilli--5

Mint leaves-- 2cup

Green chilli-- 2

Fresh coriander leaves-- 2cup

Ginger --1 inch

Garlic-- 4

Amchoor-- 1 tsp

Salt to taste

Fresh cream-- 3 tbsp

Turmeric-- 2 tsp

Sugar-- 2 tsp

For boiling potato:____ 

Potato -- 20 ( baby potato)

Watet-- 1 ltr

Turmeric -- 1/2 tsp

Salt-- 1/2 tsp

For barista::______

       

Onion -- 2 (medium size)

Oil/ Ghee-- 2 tbsp

For rice:__;___

Bandari rice-- 400 gm

Water-- 3 Ltr

Salt -- according to taste

Lemon juice-- 2 tsp

Oil-- 2 tbsp

For Biryani Assembling:--

Ghee-- 3 tbsp

Boiling rice water-- 2 cup

Saffron-- few

Kaju-- few

Kewr water

Making biryani masala:-----

Take a pan add coriander ,cumin, one star anise, jaifal, mace, green cardamom, cinnamon, black pepper, cloves, fennel seeds and rost around 1 minute in low flame. After one minute add kaju, sesame seeds, red chilli and rost around 6 minutes till golden brown. Now the rosted spices, green chilli, coriander leaves, ginger 1 inch, 5 garlic, fresh cream, turmeric, amchoor, salt, put in mixer grinder together and make a thick paste for biryani at home.

For boiling potato:______


Take a bottom pan add 1/2 Ltr water, 20 baby potato,salt, turmeric and boil for 20 minutes then strain it and set aside.

Potato marination:____

Take a bowl add the thick home made biryani masala, sugar, boiled baby potato and mix it together.Keep it aside for 4-5 hours for marination.

Making barista:--


In a pan add 2 tsp ghee/ oil and add chopped Onion and fry the onions till it turns golden brown.

Cooking Rice:---


In a deep bottom pan add 3 LTE water on high flame and when the water starts boiling add salt, lemon juice, oil, soaked basati rice. Once the rice is 60% cooked strain it and keep it aside.

Layering Biryani:_____

Take a big bottom pan on low flame add 4 tsp ghee, once ghee is melted add yougert, home made biryani masala paste, barista and stair it then add 10 pieces marinated potato and cook it for 3 minutes, now add 1/2 cup water on it and mix it well and make it 1 st layer. Now spread basanti rice on it as a second layer, then add 10 marinated potato evenly. Sprinkle some water on it and finally add saffron milk, ghee, kaju, kewra water for heavy test. Now cover the pan tightly and cook it for 20 minutes on low flame then open the lid and serve this excellent tasty biryani with side dish.
