Kolkata biryani recipe (Kolkata style)
Kolkata is a one of the big and beautiful city in India. The biryani is made in kolkata known as Kolkata biryani. It is something different in taste as well as flavour. Potato and boiled egg are the speciality of Kolkata biryani. Biryani usually cooked with rice, yogurt, chicken and many spices like mace, nutmeg, cinnamon, cardamom, rose water, kewra water etc. and the aroma is very nice for the spices. On the other hand biryani's colour is good for the use of saffron milk. Here I have given details recipe with step by step picture for better understanding.

Ingredients:......
For chicken marination:......
Chicken- 500 gm
Onion paste-2 tbsp
Garlic paste- 2 tbsp
Ginger paste-2 tsp
Yougurt - 4 tbsp whisked
Biryani masala -2 tsp
Kashmiri red chilli powder - 2 tsp
Salt -1 tsp
For barista :....
Oil-based 3 tbsp
Onion - 2 cup sliced
For cooking chicken:...
Ghee/Oil -2 tsp
Green cardamom
Cinnamon
Cloves
Salt- to taste
biryani masala- 1 tsp
Kewra water- 1 tsp
Rose water 1/2 tsp
For cooking rice:...
Basmati rice -400 gm
Water-2 ltr
Salt - 2 tbsp
Cinnamon stick- 2
Green cardamom - 4
Star anise-1
Cloves - 4
Other Ingredients :...
Eggs - 5
Potato - 3
Oil- 5 tbsp
Method :...............
Chicken marination:......
Take 500 gm chicken leg pieces or breast pieces in a bowl, add 2 tbsp onion paste, 2 tbsp garlic paste 2 tbsp ginger paste, 5 tbsp whisked yougurt, 2 tsp biryani masala, 2 tsp kashmiri red chilli powder, salt-1 tsp on it and mix it properly. Now cover the bowl and keep it aside for 40 minutes into refrigetator.
Cooking rice:...
Soak 400 gm basmati rice for 1 hour. Now take a pan, put it on high flame and add 2 ltr Water. When the water starts boiling add 2 tbsp salt, soaked basmati rice, 4 green cardamom, 1 star anise, 4 cloves, 2 cinnamon stick and boil the rice untill 80% cooked. It will take 10 to 12 minutes to cook the rice properly. While cooking rice stir it occasionally. Once done drain the water and divide the rice into two equal portion.
Boil eggs and potatoes :......
Boil 5 eggs and 3 big size potatoes by cutting into halves and 80% boil them with salt and turmeric.
Preparing saffron milk:......
Add 2 pinches of saffron into 3 tbsp warm milk, mix it well and keep it aside.
Fry the potatoes :......
In a pan on medium flame add 3 tbsp oil. Once the oil hot enough add boil potatoes and fry them lightly and set aside.
Making barista :......
Take a pan and add 2 tbsp oil then add 2 cup sliced onions and fry it on high heat till the onions turn light brown and keep it aside.
Cooking chicken:......
In the same oil add 2 tsp ghee, when the ghee is melted add green cardamom, cinnamon, cloves and saute for 3 second. Now add marinated chicken into the pan and cook it for 15 mints on medium heat. After 15 mints add salt (to taste) , 1 tsp biryani masala powder, mix it well and cover the pan and cook it for 12 mints on low flame. After that open the lid and stir it well, then add fried potatoes, 1 tsp kewra water 1/2 tap rose water then mix it well and switch off gas.

Layering :..................
Take a heavy bottom pan add ghee/oil and spread it evenly. Now add half of the cooked rice as a first layer. For the second layer add chicken pieces, gravy and potatoes on it. Now Sprinkle some barista, biryani masala powder 1/2 tsp, rose water 1/2 tsp, kewra water 1 tsp, ghee 1 tsp. For the 3 rd layer add rest of the cooked rice and spread it evenly. Then add 1 star anise, 5 boiled eggs, saffron milk, barista, 1/2 tap biryani masala powder, 1/2 tsp rose water, 1 tsp kewra water, 5 drop mitha atar, ghee on it. To seal the steam put wheat dough around the pan, close the lid tightly. Now take a tawa and heat,then put the biryani pan over the tawa and cook on low heat for half an hour. After that switch off the gas and rest for another 15 mints. Now serve the delicious Kolkata biryani with salad.
