Recipe Of Vegetable Dum Biryani

RECIPE OF VEGETABLE DUM BIRYANI

      


It is a veg dish. Biryani made using basmati rice, vegetable and various spices. The vegetarians who do not take non-veg must like vegetable dum biryani. 

SERVE - 7

INGREDIANTS:-----


FOR MARINATION OF VEGETABLE:----

Carrot- 2 cup

Mushroom- 1 cup

Peas -- 2 cup

Sliced Beans-- 2 cups (one inch long)

Cauliflower-- 2 cup

Salt-- to taste

Turmeric:-- 1/4 tsp

Chilli Powder-- 2 tsp

Cinnamon Stick-- 2

Cardamom-- few

Shahi Zeera-- 2 tsp

Garlic Paste-- 1 tsp

Ginger Paste--1 tbsp

Mace (Javitri Powder)-- 1tsp

Cardamom Powder-- 1 tsp

Green Chilli-- 2 slit

Mint Leaves-- few

Curd -- 2 cup 

FOR BARISTA:-----

Ghee/Oil-- 1/2 cup

Onion sliced--3 cup

FOR RICE:-------

Basati rice 5 cup, 

water 3 ltr.

Cinnamon stick-2, 

Green chilli- 2 slit,

salt-2 tsp, 

oil-3 tbsp, 

rose water-2 tbsp, 

kewra water-- 1 tsp,

FOR SAFFRON MILK-----

Soak saffron in 2 tbsp warm milk


HOW TO MAKE VEGETABLE DUM BIRYANI..


MARINATING THE VEGETABLE:---

In a large bowl add sliced carrot,beans,cauliflower,salt, turmeric, mushroom, chilli powder, cinnamon stick, cardamom, shahi jeera, garlic paste, ginger paste, mace( javitri powder),cardamom powder, green chilli, mint leaves, curd, just mix it gently. Now marinate the vegetable for 30 minutes.

MAKING BARISTA:---

In a bottom pan add ghee/ oil and onions, fry for 5 mints till the colour turns Golden brown then strain the onion and keep it aside. Rest amount of oil would be used in rice preparation.

RICE PREPARATION:---

Take a heavy bottom pan add around 3 ltr of water place it on high flame. Once the water starts boiling add cardamom, cinnamon, salt, green chilli, rest of oil and leave it for 5 mints. Now strain the spices and add kewra water, rose water, soaked Basanti rice and cook it on high flame. Cook the rice almost 80% and strain it.

MAKING VEGETABLE:---

In a pan add oil, barista, marinated vegetable and cook it for 5 mints on high heat. Off the gas, add green peas and stir it.

LAYERING:---

Add rice on the cooked vegetable evenly. A pinch of saffron milk sprinkle on it then add some water, oil/ghee,mint leaves, few brown onions on it. For sealing the pan use dough and cover the lid tightly. Cook it for 12 mints on low heat . Now open the lid gently and serve with raita and salad.
