Fish Biryani is a really very tasty dish. Here I have used Hilsa(one kind of fish). If you wish you can use other fish also.


Ingredients :.........

 

For cooking rice :...

Basmati rice - 400 gm

Shahi jeera - 1 tsp 

Green cardamom - 3 pieces 

Salt- to taste

Bay leaves- 4 pieces

Clove - 4 pieces

Oil - 2 tsp

Cinnamon stick- 5 pieces

Venigar/ lemon juice-2 tbsp

Mace-few

For cooking fish pieces:...

Fish- 5 pieces

Oil/ ghee - 4 tbsp

Turmeric - 2 tsp

Yougart- 30 gm

Salt- to taste 

Coriander powder 2 tsp 

Onion - 2 medium sliced 

Cumin powder - 1tsp

Red chilli powder - 2 tsp

Ginger paste -2 tsp 

Garlic paste - 2 tsp

For home made biryani masala powder:......

Star anise - 3 pieces 

Rose petals - 2 tbsp

Kabab chini - 1 tbsp

Shahi jeera - 1 tbsp

Cloves - 2 tbsp

Green cardamom - 2 tbsp 

Cinnamon stick (2 inch long)- 5 stick 

Black cardamom - 2 pieces

Nutmeg (jaefle)--2 pieces

Mace (Javitri)- few

Bay leaf - 1 piece 

Black pepper - few

Shahi morich - 1 tbsp 

For saffron milk :.....

Saffron-2 tsp

Warm milk - 2 tbsp 

Method:......

Soak the Basmati rice for 1 hour, 

Soak saffron in warm milk for half an hour 

Preparing home made biryani masala:......

Take a pan, put it on low flame and add cinnamon stick 3 pieces, shahi jeera, black paper, clove, star anise, rose petals, kabab chini, green cardamom, cinnamon, black cardamom, nutneg (jaefle), mace (javitri),bay leaf, black pepper, shahi morich, rost these for few seconds and the rosted spices put into a mixer griender and make the powder. This is biryani masala now ready to use. 

Cooking rice:-----

Take a pan on low flame and add 1 ltr water, 2 bay leaves, mace, cloves, green cardamom, jaefle, salt, oil and boil for 5 mints, then add soaked basmati rice and boil again. Now add lemon juice. Once the rice cook 80% strain it and keep aside. 

Cooking fish (Hilsa):......


In a pan on medium flame add oil, when the oil is hot enough add fish pieces, salt, turmeric( mix well)  and fry it for 5 mints, then keep it aside. Now in hot oil add onion sliced and fry it with salt then add ginger garlic paste and stairing for 2 mints. Now add turmeric powder, cumin powder, red chilli powder, coriander powder, biryani masala, salt, some water, yougart and stair it. Then add fried Hilsa pieces and cook 3 mints on high flame and keep it aside. 

Layering:......

In a pan spread cooked basmati rice, biryani masala, black pepper powder, green chilli slit, then add cooked Hilsa on it evenly and complete 1 St layer. Now sprinkle kewra water,rose water, mitha atar on it, then again spread cooked basmati rice, salt, biryani masala, soaked saffron milk, rose water, kewra water, mitha atar, ghee and cover the lid and cook it for 20 mints on low flame. Then off the gas and keep it aside for 30 mints. Now open the lid and serve the biryani with raita and salad.
