Prawn Biryani is great in taste, this is one of the       favourite dish across the India. Most of the people      like to eat this biryani. The word 'Biryani' has come     from a Persian word 'Birian'. It means fried before       cooking. So, you must try this......................                                                                                                                         INGREDIENTS:----.                                             


Onion--4 medium size

Salt--to taste

Yogurt--2 cup

Saffron

Milk--2 tbsp

Biryani masala--2 tbsp

Green chilli--6 slit

Garlic paste--2 tbsp

Ginger paste--2 tbsp

Garam masala--1 tbsp

Coriander powder--1 tbsp

Cumin powder-- 1 tbsp

Butter--2 tbsp

Oil-- 4 tbsp

Mint and Coriander leave chopped--2 cup

prawn-- 500 gm

Basati rice-- 500 gm

Red chilli powder--1 tbsp

METHOD:----

Soak the basanti rice about 45 minutes.

Preparing Barista:--


In a bottom pan add oil and onions fry for 5 mints till the colour turns golden brown. Now strain the onion and set aside.

Marinating Prawn---


Take a bowl add prawn, cumin powder, coriander powder, chilli powder, salt, garam masala powder and mix it well and set aside for half an hour

Making Rice:------


Take a big pan on high flame, add some water, when it is boiled completely add salt, oil, soaked basati rice, once the rice is 85% cooked strain it, keep it aside.

Cooking Prawn:------


In a pan on medium heat add 7 tbsp oil. When the oil is hot enough add marinated prawn and fry it for 2 minutes. Shallow fry them and reduce the flame to low.Now add spices one by one ( chilli powder, coriander powder, cumin powder, garam masala powder, biryani masala powder-- 2tbsp, green chilli, ginger paste, garlic paste) then add yogurt, fried onion, mint leaves, coriander leaves, once all the ingredients are added mix it well, again add 2 tbsp butter and salt( according to taste) then keep it aside.

Layering Biryani:-------

Add 85% cooked rice on the top of the prawn and add chopped mint, coriander, and fried onions on it, now sprinkle a pinch of water  then add rice as second layer. Again add the remaining chopped mint,  coriander, fried onions on it. Just add 1 tbsp butter on top of the rice then garnish with saffron soaked milk. Pack the pan with aluminium foil and cover the lid. Cook the biryani on low flame for 20 minutes. Now the excellent prawn biryani is ready for serve.
