Ingredients:-----


For Cooking Rice:--- 

   

                                                                        Basati rice- 400 gm

Bay leaf-- 1 

Shah Jeera-- 1/2 tsp

Clove-- 5 

Green cardamom-- 4

Cinnamon-- 2 pice

Lemon juice- 1tsp

Salt-- to taste

For Cooking Soya Chunks--


Green chilli- 2

Potato-- 10 pisces(optional)

Onion-- finly chopped-- 2 cup, for barista-- 3 cup sliced(onions)

Ginger Garlic paste-- 2 tbsp

Soya chunks-- 200 gm

Yougart-- 100 gm

Mertua Atar-- 3 drops

Kewra water-- 1 tsp

Rose water-_1/2 tsp

Saffron-- few

Red chilli powder-- according to taste

Ghee--2 tbsp

Biryani masala powder-- 2 tsp

Garam masala powder-- 2 tsp

Salt-- to taste

Sugar-coated 1 tsp

Oil-- 3 tbsp

Method:--

Soak Basati rice for 30 mints,

Soak sadaron in 2 thap warm milk

Soak the soya chunks in hot water for 30 mints. 

Preparation of rice:--------


Take a bottom pan on high heat and add 2 ltr water, bay leaf, cloves, cinnamon, cardamom, shah jeera, salt- 1 tbsp, oil- 1 tsp. When the water starts boiling add soaked basati rice, mix well and cover it for four minta, Now add rose water, kewra water, lemon juice-1/2 tsp and stair it. Once the rice 80% cooked strain it and keep it aside.

For barista:.........


Heat 6 tbsp oil in a bottom pan and add sliced onion, fry it on high heat for around 5 mints till the onion turns light brown. Now Batista is ready, strain it and set aside. 

For potato fry:.........


In a pan add potato, salt and turmeric and fry it, then the fried potato keep aside. 

Cooking soya chunks:......


Take a pan, add oil, soaked soya chunks and mix with salt turmeric then fry it on medium heat and set aside. 

Cook soya chunks and potato:.........


In a pan on medium heat add oil, when the oil hot enough add onion(finly chopped), mix it well. Once the onion is shallow fried add 1 tbsp ginger garlic paste, stair it and again add salt, turmeric,  1/2 tsp cumin powder, 1 tsp red chilli powder, 1/2 tsp Garam masala powder,1/2 tsp Biryani masala, mix and fry for 1 mints. Now sprinkle few water on it and stair it. Then add 3 tbsp yought, 1 tsp Kewra water,1/2 tsp rose water for good taste and mix it. Then add fried potato and stair it. Cover the pan for 3 mints. Again add fried soya chunks and some water and cook for 4 mints. Now add 1 tbsp ghee, cover the pan and off the gas. 

Layering:.........

Take a heavy bottom pan and add half cooked soya chunks and potato evenly, next the basmati rice spread on it as a 1 st layer. Then spread remaining half cooked soya chunks and potato on it, after that spread again basmati rice on it as 2 nd layer. Now sprinkle barista, 1/2 tsp biryani masala, soaked saffron milk, slit green chilli, ghee 1 tsp, salt (few), 1 tsp kewra water, 1/2 tsp rose water, 3 drops meetha atar. Cover the pan and cook it for 20 mints on very low flame, wait 10 mints, then open the lid and serve the tasty biryani in plate.
